BBQ Chicken Sliders

Juicy BBQ chicken, melty Gouda cheese, and sweet Hawaiian rolls come together with a garlic-herb butter topping for an easy, crowd-pleasing party food that bakes up golden and crispy.

Ingredients
  

  • 12 Hawaiian sweet dinner rolls
  • 3 cups shredded rotisserie chicken (or chopped cooked chicken)
  • 1 cup BBQ sauce
  • 1 package (8 ounces) thinly sliced Gouda cheese, about 12 slices (or sharp Cheddar)
  • 1/3 cup finely diced red onion, optional
  • 2 tablespoons finely chopped cilantro, optional
  • 4 tablespoons garlic-herb butter
  • 1 tablespoon grated Parmesan cheese, optional

Instructions
 

  • Preheat oven to 400°F. Grease a 9x13-inch baking pan. Slice the Hawaiian rolls in half horizontally as one connected top slab and one connected bottom slab. Place the bottom slab in the prepared pan.
  • In a medium bowl, combine shredded chicken and BBQ sauce. Stir until fully coated.
  • Layer half of the Gouda slices on the bottom slab of rolls. Add the BBQ chicken evenly on top. Add red onion and cilantro if using. Top with remaining Gouda slices, then place the top slab of rolls on top.
  • Melt garlic-herb butter and pour evenly over the rolls. Brush across the tops and sides, letting some drip underneath. Sprinkle Parmesan on top if using.
  • Cover with foil and bake for 20 minutes. Remove foil and bake an additional 3 to 6 minutes, until cheese is melted and tops are golden brown.
  • Remove from oven and slice along the pre-cut lines to separate sliders. Serve immediately while warm.

Notes

Note 1: Pre-shredded rotisserie chicken from the deli saves prep time. Leftover baked or grilled chicken also works.
Note 2: Use a BBQ sauce you genuinely enjoy, such as Sweet Baby Ray's Original or Stubb's Original.
Note 3: For garlic-herb butter, use a store-bought version like Kerrygold, or make your own with 4 tablespoons melted butter, 1/4 to 1/2 teaspoon garlic powder, and 1/2 to 1 teaspoon Italian seasoning.
