Coconut Chicken Rice Bowl

Ingredients
  

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

For the Sauce:

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

For the Rice Base:

  • 2 cups cooked jasmine, basmati, or brown rice

For Cooking:

  • 1 tbsp vegetable oil or coconut oil
  • Salt and pepper to taste

For Garnish:

  • Fresh cilantro or sliced green onions
  • Lime wedges (optional but recommended)

Instructions
 

  • Heat 1 tablespoon of oil in a large skillet over medium heat until shimmering. Swirl to coat the pan evenly.
  • Add the diced chicken in a single layer. Season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through to an internal temperature of 165°F.
  • Add the minced garlic and grated ginger to the pan. Stir and cook for 1 minute until fragrant.
  • Pour in the coconut milk, soy sauce, and lime juice. Stir well to combine. Bring to a gentle simmer and cook for 5–7 minutes, until the sauce thickens slightly and coats the chicken beautifully.
  • While the chicken simmers, warm your cooked rice in the microwave or on the stovetop until fluffy and heated through.
  • Spoon the rice into bowls and ladle the coconut chicken and sauce generously on top. Garnish with fresh cilantro or green onions and a lime wedge on the side. Serve immediately.

Notes

Sauce too thin? Stir 1 tbsp cornstarch mixed with 2 tbsp cold water into the simmering sauce and cook for 2 more minutes.
Protein swaps: Shrimp (cook 3–4 min), firm tofu (pan-fry first until golden), or chickpeas all work beautifully.
Add vegetables: Bell peppers, snap peas, broccoli, or baby spinach can all be added in the last few minutes of cooking.
Make it gluten-free: Use tamari or coconut aminos in place of soy sauce.
Storage: Refrigerate chicken and rice separately in airtight containers for up to 3 days. Freeze chicken mixture for up to 3 months.
Meal prep tip: The coconut chicken can be made up to 24 hours ahead and reheated gently when ready to serve.
