Frozen Peanut Butter Yogurt Bites

Ingredients
  

  • 1 cup plain Greek yogurt (full-fat or 2% recommended)
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 teaspoon sea salt

Instructions
 

  • In a medium mixing bowl, combine Greek yogurt, peanut butter, honey, vanilla extract, and sea salt. Stir until completely smooth and well combined.
  • Gently fold in the mini chocolate chips with a spatula until evenly distributed.
  • Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, drop the mixture into small bite-sized mounds on the parchment. (Tip: wet your spoon between scoops to prevent sticking.)
  • Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are completely solid.
  • Once fully frozen, transfer the bites to an airtight container or zip-top bag. Store in the freezer until ready to eat.
  • For best texture, let bites sit at room temperature for about 60 seconds before eating.

Notes

For a chocolatey twist, mix 1 tablespoon of cocoa powder into the base before folding in the chocolate chips.

These keep in the freezer for up to 3 months in an airtight container.
