Pool Party Jello Shots

Ingredients
  

  • 3 oz blue raspberry flavored gelatin mix (such as Jell-O)
  • 1 cup boiling water
  • 1 cup vodka (or cold water for a non-alcoholic version)
  • 20 peach ring gummies (one per shot)
  • 20 gummy bears (one per shot, cut in half)
  • 20 x 1 oz disposable plastic shot cups

Instructions
 

  • Line up all your 1 oz disposable shot cups on a flat tray or baking pan. Make sure the tray fits in your refrigerator before you start.
  • In a large measuring cup or mixing bowl with a pour spout, add 1 cup of boiling water.
  • Pour in the entire 3 oz packet of blue raspberry gelatin mix. Whisk vigorously for about 2 minutes until every granule is fully dissolved and the liquid is smooth and bright blue.
  • Add 1 cup of vodka (or cold water) to the dissolved gelatin mixture. Whisk again to fully combine.
  • Carefully pour the blue jello mixture into each shot cup, filling nearly to the top. Leave a very small amount of space at the rim.
  • Transfer the tray carefully to the refrigerator. Chill for a minimum of 3 hours, or overnight, until the jello shots are completely firm and set.
  • Once fully set, place one peach ring gummy flat on top of each shot cup.
  • Cut one gummy bear in half and press it upright into the center hole of each peach ring so it stands up like a bear on a pool floatie.
  • Keep refrigerated until ready to serve. Store on ice if serving outdoors.

Notes

  • Storage: Store covered in the refrigerator for up to 7 days.
  • Non-alcoholic version: Replace the 1 cup of vodka with 1 cup of cold water. The shots will set firmer and faster.
  • For a stronger set: Use ¾ cup vodka and ¼ cup cold water instead of a full cup of vodka. Alcohol can slightly inhibit setting.
  • Tip: A measuring cup with a pour spout makes filling the shot cups much easier and less messy.
  • Add toppings only after shots are fully set so the gummies sit on top rather than sinking in.
  • Serving tip: Keep cool while serving. These will soften quickly in warm outdoor temperatures - place the tray on ice.
