In a medium saucepan, bring 4 cups of water to a boil. Remove from heat immediately.
Add the 4 green tea bags and 3 mint sprigs to the hot water. Cover the pot and let steep for 15–20 minutes. For a stronger tea, steep up to 30–45 minutes.
Remove and discard the tea bags and mint sprigs.
While the tea is still warm, stir in the honey until fully dissolved. Taste and add more honey if desired.
In a large pitcher, add 1–2 cups of ice and 2 cups of cold water. Pour the tea mixture over the top and stir to combine.
Serve over ice in glasses or mason jars. Garnish with fresh mint sprigs. Enjoy!
