TikTok-Style Boat Dip (Rotel Ranch Dip)
A cool, creamy, ultra-flavorful ranch dip loaded with fire-roasted corn, Rotel tomatoes, green chiles, and cheddar cheese. The ultimate make-ahead party dip that's always the first thing to disappear at any gathering.
- 8 oz cream cheese, softened to room temperature
- 16 oz sour cream
- 1 oz packet ranch seasoning mix
- 15 oz can fire-roasted corn, drained
- 10 oz can Rotel diced tomatoes and green chiles, drained
- 4 oz can diced green chiles, drained
- 8 oz shredded cheddar cheese
Whip the cream cheese. Add softened cream cheese to a large mixing bowl. Beat with a hand mixer (or a sturdy whisk or rubber spatula) until completely smooth and creamy with no lumps.
Combine all ingredients. Add the sour cream, ranch seasoning, drained fire-roasted corn, drained Rotel, drained green chiles, and shredded cheddar cheese to the bowl. Stir well until everything is fully combined.
Cover and refrigerate. Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours. For best flavor, chill for 3 hours or overnight.
Serve. Serve cold with tortilla chips, pita chips, crackers, or fresh vegetables.

- This dip can be enjoyed right away but tastes significantly better after chilling - the flavors fully meld together. Don't skip the chill time!
- Drain all canned ingredients well. Excess liquid can make the dip watery.
- Make it the night before for the best results and zero day-of prep stress.
- No cream cheese? Replace with an additional 1 cup of sour cream.
- Serving size is approximate - exact portions depend on how many dippers (and how hungry everyone is!).

- Seasoning swap: Use taco seasoning in place of (or in addition to) ranch seasoning.
- No Rotel? Substitute with an equivalent amount of drained chunky salsa.
- No fire-roasted corn? Frozen corn, thawed and drained, works great.
- Make it heartier: Stir in drained black beans, shredded cooked chicken, or cooked and crumbled sausage.
- Cheese swap: Colby-Jack or a Mexican blend cheese are delicious alternatives to cheddar.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days. Do not freeze.
