Unicorn Marshmallow Popcorn

A whimsical, colorful party snack that combines crunchy air-popped popcorn with fruity pastel marshmallow coating. Ready in under an hour with minimal cleanup.

  • 1 large mixing bowl
  • Several microwave-safe bowls (one per marshmallow color)
  • Spoon or spatula
  • Parchment paper or baking sheet
  • Non-stick spray

Ingredients
  

For the Popcorn Base:

  • 10 cups air-popped popcorn (plain, unsalted)

For the Marshmallow Coating:

  • 1 bag Campfire® FruitSwirler Marshmallows, sorted by color
  • 4 tablespoons butter (divided, approximately 1 tablespoon per color)
  • 1 cup mini fruit marshmallows

For the Finishing Touches:

  • 1 cup colorful sprinkles (optional)

Instructions
 

  • Lightly coat a large bowl and spoon with non-stick spray. Add air-popped popcorn to the bowl. Lay a sheet of parchment paper on the counter for cooling.
  • Sort Campfire® FruitSwirler Marshmallows by color into separate microwave-safe bowls. Add approximately 1 tablespoon of butter to each bowl.
  • Microwave the first color of marshmallows and butter in 30-second intervals, stirring between each, until fully melted and smooth (usually 2–3 rounds).
  • Immediately pour the melted mixture over the popcorn and fold quickly to coat. Work fast - the coating sets quickly.
  • Repeat the melting and coating process with each remaining color, drizzling each over different sections of the popcorn to create a rainbow swirl effect.
  • While the coating is still warm and tacky, scatter mini fruit marshmallows over the top and toss gently to adhere. Add colorful sprinkles if using.
  • Spread the finished popcorn onto parchment paper in a single layer. Allow to cool and set at room temperature for 30 minutes before serving.

Notes

If marshmallow mixture hardens before you finish coating, return to microwave in 10-second intervals until loosened. Grease all tools with non-stick spray before starting. For make-ahead: complete steps 1–6 up to 24 hours before serving; store in an airtight container at room temperature and add sprinkles right before serving. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
