Ingredients
1 cup plain Greek yogurt (full-fat preferred)
1/2 cup natural sweetener (honey, maple syrup, or coconut sugar)
1 large egg, room temperature
1 tsp pure vanilla extract
1 cup oat flour
1/2 cup protein powder (vanilla or neutral whey)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup mix-ins of choice
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Whisk together Greek yogurt, sweetener, egg, and vanilla until smooth.
In a separate bowl, whisk oat flour, protein powder, baking soda, and salt.
Fold dry ingredients into wet until just combined. Do not overmix.
Fold in your mix-ins.
Scoop tablespoon-sized portions onto baking sheet. Gently flatten each one.
Bake 10–12 minutes until edges are golden. Cool on sheet 5 minutes, then transfer to a wire rack.

Storage
Room temp:
Airtight container, 3–4 days (add a slice of bread to keep soft).
Freezer:
Freeze individually, then bag. Up to 3 months.
Reheat:
Microwave 10–15 seconds or warm in 300°F oven for 5 minutes.
